Ellison Bakery Inc. plans to invest $1.25 million to add a third oven and production line in its plant at 4108 Ferguson Road after the cookies find a loyal customer base, said Todd Wallin, vice president and general manager. That would add about 15 jobs to the workforce, possibly within a year. The company now employs 75. Ellison Bakery made Archway cookies from 1950 to October. The Fort Wayne-based company produces approximately 150,000 dozen cookies per day, resulting in an annual output of 520,000,000 Long known for its association with Archway Cookies, Ellison recently introduced a new line of branded cookies marketed under its own name. MJ Sparks, national retail sales manager, said the process began when Archway filed bankruptcy in late 2008. Ellison was the first Archway franchisee circa 1950. In 1997, Ellison sold the franchise back to Archway Corporation and initiated a long term contract baking agreement which prevented Ellison from producing any other product for retail sales, Sparks said. Ellison to launch own cookie brand New Products to be in stores in about a month By Linda Lipp • Fort Wayne Business Weekly • April 2, 2009 For nearly 60 years, cookie lovers everywhere were familiar with the treats made by Fort Wayne's Ellison Bakery, even though they probably didn't know the company's name. That's all about to change. By the end of April, grocery stores will be selling Ellison's new line of premium cookies for the first time under Ellison's own name. Don Ellis and his father founded the bakery in 1945 - crunching its name from Ellis and son - and purchased the license that followed it to begin developing and baking cookies for Archway in 1950.
